# Baked Asparagus
1. Chop off 1-1.5 inch from bottoms of asparagus.
2. Lay on baking sheet (lined with parchment paper).
3. Sprinkle oil of your choice (extra virgin olive oil).
4. Sprinkle salt and pepper to taste (a lot).
5. Bake at 350 F for 15-30 minutes (25 minutes).

# Baked Potatoes
1. Wash large Russet potatoes.
2. Stab each potato 6 times: 3 on top, rotate 90 degrees, then 3 more perpendicular.
3. Microwave for 6 minutes in 1100 W microwave oven, 10 minutes in 700 W oven.
4. While microwaving, remember you forgot to turn the oven on to 400 F so do that now.
5. After microwaving, move potatoes directly from the microwave to the oven.
6. Bake directly on oven rack at 400 F for 1 hour.
7. Allow to cool, spread butter, garlic, pepper, salt, parsley to taste.
8. Gently press spices in with knife or fork.

# Chicken Salad
In medium bowl:
1. 1 Large canned chunk chicken, drained
2. 1/4 to 3/4 cup mayo (start with 1/4 cup work your way up to taste)
3. Mash very well with fork (no chunks).
4. 2 tsp fresh ground pepper
5. 1 tsp basil, garlic, onion, thyme, oregano, parsley
6. 1 cap apple cider vinegar.
7. Mix it up some more
8. Recipe calls for 1 tsp cane sugar but you can skip sugar entirely.
Substitute chicken with [hard boiled eggs](hard-boiled-eggs.md) for egg salad.

# Filet Mignon
Follow Gordon Ramsay's recipes.
He suggests sunflower oil.
1. Dry meat with paper towel.
2. Trim excess fat.
3. Season with salt and pepper.
4. Directly into cast iron, with oil (extra virgin olive oil). Sear well.
5. 4-5 minutes each side, medium rare.
6. Add Butter, garlic, and thyme to the pan, baste meat.
7. Check internal temperature with thermometer.
8. You may need to slice the meat while it cooks. This is normal.
9. Continue to sear on all sides until desired internal temperature is reached.

Dressing:
1. 1/4 cup extra virgin olive oil
2. Zest of a lemon
3. 2tsp fresh thyme, shredded
4. 2tsp oregano, shredded
5. 2 tbsp red wine vinegar
6. 2 tsp Honey mustard
7. Half of a lemon juice
8. 1/2 tsp salt

# Hard-boiled eggs
1. In a pot large enough to hold as many eggs as you'd like (from a single egg up to one dozen), add enough water to just cover the eggs.
2. Put eggs on stove on high, bring to a rolling boil.
3. Once water reaches a rolling boil, turn off the heat and allow 30 minutes to cook completely.
4. Optionally peel them now, they'll be very easy to peel under cool water.
Speed eggs: if you're in a hurry you can leave it to boil for 10 minutes and it will be cooked completely through with a chance of ruining your eggs (they may split open).
