Filet Mignon
Follow Gordon Ramsay's recipes.
He suggests sunflower oil.
- Dry meat with paper towel.
- Trim excess fat.
- Season with salt and pepper.
- Directly into cast iron, with oil (extra virgin olive oil). Sear well.
- 4-5 minutes each side, medium rare.
- Add Butter, garlic, and thyme to the pan, baste meat.
- Check internal temperature with thermometer.
- You may need to slice the meat while it cooks. This is normal.
- Continue to sear on all sides until desired internal temperature is reached.
